I was just about to throw this rather old Parsnip (Pastinaca sativa) in the compost bin, and thought I would see if it reacted to UV. The results are quite interesting!

Technical details:
Nikon D850 with 105mm lens.
UVF: subject light painted with Convoy S2+.
15 seconds @ f/16, 200 ISO

The golden rule of UVP: never throw anything away unless it is photographed in UV/IR/UVIVF etc. first.

Is the colour reflecting the mental state of the root as it was going to end on the compost?

That's pretty amazing! It almost rivals your result with the oranges(?) (or maybe it was clementines?) from awhile ago.
